Gluten Free, Peanut Free Energy Balls!

Looking for a healthy snack for on the go or working from home? Trying to find a healthy snack that actually tastes good? These gluten free, peanut free energy balls might be your new go to!
- 1/4 Cup ground sunflower seeds
- 1 1/2 cups rolled oats
- 2 tbsp ground flax seeds
- 1/4 tsp coco powder
- 2 tbsp coconut oil
- 2 tbsp maple syrup
- 2/3 cup warm water
- 1/2 tsp vanilla extract
- 2 tbsp protein powder of your choice
These are such a yummy snack and are especially good on the go! They also only take about 30 minutes to make, including the cooking time in the oven! For me, it was especially important to create a snack that was gluten-free, but still delicious. Finding yummy gluten-free recipes are generally not the easiest to come by as I’m sure those who are eating gluten-free know. I also decided to create something peanut-free because so many people have peanut allergies! You can add some protein powder to the recipe too if you are looking for extra protein! They are about 120 calories per large ball, without the protein powder. I hope you all enjoy!
Step by Step Instructions
Pre-heat your oven to 350 degrees Fahrenheit. Take out an 8X8 pan and line it with parchment paper.
Grind up 1/4 cup of sunflower seeds and 2 tbsp flax seeds. Then add to the mixer along with the 1/4 tsp coco powder, 2 tbsp of protein powder of your choice, and 1 and 1/2 cup rolled oats
Add in the liquid 2 tbsp of coconut oil, 2 tbsp maple syrup and 2/3 cup war, water and mix together.
Use a small ice cream scoop or spoon to scoop out the dough and use your hand to roll and mold the dough into ball shapes and place on parchment paper covered pan. I usually get 10 out of 1 batch.
Then put them in the oven for 10 minutes. After let them cool down.
